The West is eating less meat, and developing countries are eating more plant-based protein. “As incomes rise, consumer preference moves from wheat and grains to legumes, and then to meat, including chicken, pork and beef,” says David Widmar, agricultural economist at Purdue University, USA. "If we’re serious about feeding the world’s growing population healthy food, and not ruining the planet, we need to get used to a new style of eating. This includes cutting our Western meat and sugar intakes by around 50 percent, and doubling the amount of nuts, fruits, vegetables and legumes we consume."
