| Scope & content | This report describes the changes made to the methods of milling wheat in Ontario grist and flour mills from the 1780's to the 1870's. The machinery and mill furnishings are described during five overlapping periods of technical developments. Part I. The old process or fast reduction mills, 1782; Part II. The Automatic Mill of Oliver Evans, 1795; Part III. Improvements to automatic old process mills, 1800-1860's; Part IV. The new process of gradual reduction, 1863; Part V. Roller milling in Ontario, 1875. The author provides a general overview of the political, economic, social and geographical influences that affected the flour milling industry during this 90 year period. The information in the report is based largely on 18th and 19th century millwrights guides, Canadian manuscripts, patents, and secondary sources related to flour milling. A glossary is provided at the end of the report plus chapter references and an extensive bibliography. |
